Brown Sugar and Mustard Rubbed Ribeye
Definition
13oz natural Niman Ranch Ribeye grilled and then rubbed with a mustard compound butter and a thin layer of brown sugar. The steak is finished under a broiler to give it a burnt sugar crust. Served with a whole clove of roasted garlic, which should be spread on the steak by the customer.

8oz. Tenderloin is grilled and topped with a classic béarnaise sauce. Served with a steak tomato.

Natural Hanger Steak
Definition
Considered a butchers cut because they are hard to find and difficult to clean and cook, the hanger is one of the most flavorful cuts. We butterfly ours and pound then out thin. They are grilled over a very hot fire and spread with a cholula compound butter. Served with grilled red onion, lime wheel, avocado and a tomato slice. Should not be ordered above medium.

Definition
10-12oz Bone In Pork Chop brined in citrus and brown sugar, cold smoked for 1 hour, and grilled to medium. Served over leek whipped potatoes, grilled baby carrots and zucchini and finished with a lemon and lavender honey glaze.

8- 10oz. (half-rack) Colorado lamb are seasoned with salt, pepper and rosemary then grilled whole. The rack will be sliced after resting. Served on escarole that has been sautéed with garlic butter. House made lamb demi and roasted cipolinis are around then plate. Then toasted garlic buttered bread crumbs are sprinkled around at the end.

Shrimp and Grits
Definition
4 U-10 day shrimp (approx. 6 oz.) are grilled with salt and pepper. Served with Stone ground yellow grits that are finished with a little bit of goat cheese and pieces of Bentons country ham. Then the sauce is a little scallion butter that we add some raw jalapeno, chili flake, and lemon to. Garnished with some fresh watercress.
