Sour Rocks - Clear Creek 2 Yr French Cask Apple Brandy, Golden Moon Kummel (a caraway, fennel and cumin liqueur form Northern Europe), Manzanilla (Dry) Sherry, Fresh lime juice, Asian Pear Oleo (Pears macerated in sugar), radish kimchee water with alliums, Peychauds Creole Bitters. Shaken, on the rocks, and garnished with a fresh mint sprig.
Like biting into a fresh Honeycrisp apple. Tangy, tart, sour and aromatic. We only use a tiny bit of the kimchee water to hit the savory part of your palate and make you want to keep drinking. The sherry adds a salty, mineral quality while also lengthening the finish. Mint pairs nicely with the peppercorn and anise in the Peychauds.

Sour Up - Green Cardamom infused Banknote Blended Scotch Whisky, Tempus fugit Creme de Cacoa, fresh lemon juice, Clover Honey, and Egg white. Dry shaken (wihout ice) first to make it fluffy, then shaken again with ice to chill and dilute and strained into a coupe glass. Garnished with a sprig of dill and a dried rosebud.

Sour/Cosmopolitan - St George Vodka fresh lemon juice, Wintermelon Oleo (Asian wintermelon rind macerated in sugar) and many herbs including parsley, sage, rosemary, thyme, etc. in the form of Strega, an herbal liqueur from Italy, and Bittermens Scarborough Bitters. A splash of Clear Creek Cranberry Liqueur is sunk into the glass after the cocktail is shaken and strained into a coupe glass. Garnished wih fresh sage.
The bones of a cosmo but with the soul of a gin cocktail. Herbes de Provence from the bitters and Strega and perfumey wintermelon Rind give depth of flavor while, lime and cranberry add tart and bright notes. Perfect cocktail to pass the time between Thanksgiving and the New Year! |

Sour/Daisy - Blanco Tequila and Strawberry Brandy from Ventura, CA are the main spirits in this wintertime cordial. Paired with fresh lime and cara cara or mandarin juice, wild black rice syrup, and a dash of Martini and Rossi Bitter Speciale. Shaken and strained over a big rock and topped with a 1/4 cloved orange wheel.
Refreshing Cara Cara orange and lime balance the earthy, malty sweetness of he rice. The Bitter Speciale gives structure to the Tequila and Brandy and bridges the gap between spirits, sugar, and acid. The aroma of he cloved orange connects all of the dots and pulls out spice notes from the Bitter Speciale.

Manhattan/Bijou - Mezcal, Blanco Tequila, Green Chartreuse, and Sweet Vermouth with homemade Mole´ Bitters (Cocao nibs, golden raisins, pepitas, white sesame, cinnamon, allspice, cumin, green garlic, Morita chiles) Stirred and served up, garnished with expressed grapefruit oil.
Stiff, silky, and herbaceous. This spirit forward cocktail has a sweetness on par with a traditional Manhattan but with more complex aromatics and flavors thanks to the Chartreuse and Mole´ bitters. The oil from the grapefruit peel rounds everything out wih a hint of pepper and fruit. This is Andrew's first ever cocktail on a menu!

Egg Nog - Almond Creme Anglaise (Spiced Orgeat Syrup, Almond Milk, Heavy Cream, Egg Yolks), Egg white, Pineapple juice, Cinnamon infused Hamilton 86 Demerara Rum, and Tawny Port. Quckly whipped and served in a beer glass, garnished with grated nutmeg and ground caraway. Always gets a straw.
Using Creme-Anglaise gives this Nog a rich, silky texture and flavor. The egg white makes it light and fluffy, while the pinapple, port and cinnamon rum elevate with tropical warming notes of molasses and tiki. Recommended for drinking toward the end of the meal. Don't pair with Duck Hummus or Baba. Holidays only!
